By 1997 Appleton's Central Alternative High School (Wisconsin,
US) was plagued by disciplinary problems, including drugs and
gun-carrying, making teaching all but impossible. Now both students
(and staff) show better health and behaviour, stamina and attitude.
Classes are more attentive, cooperative, and prepared to tackle
difficult projects. Grades are up, truancy down. The difference?
Diet.
In 1997 a private group called Natural Ovens, from Manitowoc,
Wisconsin, funded a Wellness and Nutrition Programme at the school.
A kitchen was built and staffed to produce healthy meals and snacks,
and a daily 'energy drink' for students and staff alike. The drink
consists of fruit juice, whole fruit and a ground flax 'energy
mix'. This mix is high in omega-3 essential fatty acids (EFAs).
Of equal importance, all drink and food vending machines were
removed from the school. As well as feeling happier and healthier,
the students reported improving their diet outside school as
well.
