Green beans firmer and, well ... greener

Frozen green beans were blanched by either boiling, steaming or microwaving.

The microwaved beans ended up greener, harder and tougher.

Ed.- The finding is possibly an indicator that the beans had retained greater nutritious property, possibly due to the shorter duration of cooking, but could equally well suggest that the beans had been less cooked.
